Immune-Boosting Pineapple Popsicles

Whether your kids need to cool off from the summer sun or could use a large dose of Vitamin C to combat a cold – these immune-boosting, refreshing pineapple popsicles hit the spot. Making your own popsicles may seem daunting, but believe me, it’s so much more rewarding knowing my kids are eating healthy, clean ingredients that I can trust.

Store-bought popsicles often contain added sugars, and those that claim to be ‘sugar-free’ or ‘no added sugars’ contain tons of artificial sweeteners and preservatives.

Here’s a look at the ingredients of Outshine’s No Sugar Added Fruit Ice Bars:

Water, Sorbitol*, White Grape Juice from Concentrate, Tangerine Juice from Concentrate, Maltodextrin**, Glycerin, Polydextrose, Natural Flavor, Citric Acid, Orange Pulp, Ascorbic Acid (Vitamin C), Guar Gum, Tangerine Oil, Sucralose, Carob Bean Gum, Acesulfame Potassium, Beta Carotene (Color), Modified Cornstarch, Turmeric Oleoresin Color.

Ingredients:

4 cups pineapple

1 cup unsweetened coconut milk

2 tsp vanilla extract (or you can make your own)

raw honey (or maple syrup – optional)

Instructions:

  1.  Place all ingredients in a blender and puree until smooth. Pour mixture into popsicle mold and freeze until solid.
