Coconut Chia Seed Yogurt

If you’ve noticed a theme around here, most of my recipes contain a significant dose of fat. I wasn’t always a fat-lover though. For most of my adolescence and early 20’s, I was terrified of fat. Everything I ate was either “low-fat”, “reduced-fat” or “no fat”.

But now I know better. Fats are essential for brain health, hormone synthesis, blood sugar regulation, maintenance of body temperature, and they also store and carry nutrients around the body. Fats also take longer than carbohydrates and protein to digest so they help keep you full longer. Bottom line, don’t be afraid of fats!

Ingredients

1 can full-fat organic, unsweetened coconut milk

4 tbsp chia seeds

1 tsp vanilla

2 tsp honey

½ tsp salt

dash cinnamon

½ cup mixed berries

Instructions 

Blend and divide among two bowls. Chill overnight or for at least 2-hours. Top with berries and enjoy!
